FIGOLLI by Marion Borg

Ingredients

PASTRY

500gr plain flour

1 tsp baking power

175gr sugar

175gr unsalted butter

3 eggs


FILLING

350gr ground almonds

350gr sugar

2 eggs

Grated rind of 1 lemon

Tsp vanilla essence (optional)


ICING (ROYAL ICING recipe on Cookidoo)

300 g white sugar

1 egg white

1/ 4 tsp lemon juice

 

Preparation


PASTRY

1.Grind sugar together with lemon peel. 15 seconds / speed 10.

2.Add butter cut into 5cm cubes, the flour, baking powder and mix for 5 seconds / speed 4.

3. Add the eggs and mix for 20 seconds / speed 5.

FILLING

1. Mix everything together speed 4 on reserve for 10 seconds.


ICING

1. Place sugar into mixing bowl and mill 30 sec/speed 10.

2. Add egg white and lemon juice and mix 10 sec/speed 6.

3. Transfer into a sealable container or bowl. Use as required.
